Veg Trolley Raid Soup

This soup is delicious and SO easy!

Recipe at the bottom 📝 this is a rough recipe because I genuinely raided the veg trolley and fruit bowl for things that looked past their best! #wastenotwantnot So don’t expect exact measurements with this recipe, this is more of a ‘guide’.

Carrots contain loads of nutrients, including beta carotene (beta carotene is converted into Vitamin A/Retinol which our bodies need for good eye health, healthy skin and a strong immune system) and antioxidants. Carrots also feed the friendly bacteria in your gut, which will lead to improved health on so many levels. Happy Gut = Happier Mind.

Apples boost brain health as well as supporting your immune system. I love using up apples in soups when they’re a little past their best and not really ‘Snack worthy’. They add a slightly sweeter flavour. Apples are mainly carbohydrates and water but they also contain a good level of fibre and vitamin c, which means they are great for your gut health and help regulate your blood sugar levels. They also contain quercetin which is a nutrient believed to have anti-inflammatory properties

Cabbage helps improve digestion and helps to lower cholesterol. As well as being a great source of vitamin c. Not only are cabbages one of the most affordable vegetables they also offer a whole host of benefits supporting your immune system, digestive health and bone health

Onions have been linked to improved bone health and lower blood sugar levels. Another vegetable that is high in vitamin c, onions are great for supporting your immune system. Being so high in vitamin c onions encourage your collagen production and offer support against damaging free radicals.

The only thing I peeled was the onion 😂. Everything else goes in as it is! 

  • 1 Onion
  • 2 Apples
  • Some carrots that resembled my toes after a really long bath
  • 1/2 a white cabbage
  • Garlic
  • Coriander
  • Parsley
  • Salt & Pepper
  • Stock Cube
  • Water
  • Add a little oil to a pan, dice the onion and begin to gently fry off.
  • Roughly chop the carrots and apples add to the pan. I used ground garlic and coriander but you could use fresh if you want to be fancy. This was just a grab ingredients out of the cupboard job!
(I would estimate I used about a heaped teaspoon of garlic and a level teaspoon of coriander and the same of parsley.)
  • Add some water to stop the veg sticking, you want to get the veg releasing the flavours before you cover them in water.
  • Chop up the cabbage, chunks is fine – it’s going to break down and get blitzed anyway.
  • At this point season with salt and pepper, always add more pepper than you think you need to!
  • Top up water, crumble in your stock cube and bring to a simmer.
  • Simmer for an hour or so. Keep topping up water!
  • You’re looking for the Veg to be super soft. It will smell divine.
  • Grab your stick blender and blitz that baby! You’ll always end up adding more water as you blitz to make it an acceptable soup consistency.
Add a pinch of paprika if you fancy, or chilli if you’re feeling crazy 🤪
