Cheesy Baked Fridge Raid Frittata
Eggs are really good for you, especially when they are really fresh like these collected from our hens. Eggs are packed full of Vitamin D and B12 both VITAL for brain function affecting your mood. Playing a huge part in your body’s production of Serotonin and dopamine – happy hormones!
This recipe is super simple, use whatever you have in the fridge, a pepper, celery, ham … anything! Low cost & super easy to make, here’s how
Cheesy Baked Fridge Raid Frittata

Ingredients
- 6 Eggs
- 4 New Potatoes
- 1 Courgette
- 100g Grated Cheese (I used lactose free cheddar)
- 1/2 Tea Spoon Smoked Paprika
- Salt and Pepper to taste
- 1 tbsp Olive Oil

- Small Ovenproof dish, mine is 6"x 8"

- You can change all the 'fillings' depending on what you have in the fridge. Hence the name of this recipe.
Instructions
1.
Heat your oven to 180oc Drizzle some olive oil into the dish.
2.
Dice up your potatoes & courgette.
3.
Pop into your dish season with salt & pepper, sprinkle with approx 1 tea spoon of paprika.
4.
Mix to cover the potatoes & courgette with the olive oil & seasoning.
5.
Pop in the oven for 15mins, remove and stir, add a little water to the dish to avoid sticking. Return to the oven.
6.
Whisk your egg whites in one jug, and your yolks in another with some salt and pepper .
7.
Gently combine the whites with the yolks to keep as much air as possible in the mixture. Grate your cheese
8.
Once the potatoes are softened add the egg mix to the dish, sprinkle over the cheese & combineReturn to the oven and watch the magic happen!
9.
Cook until golden brown, serve either hot or cold. Keep in the fridge for fridge pickers
