Berry Rice Cake

Sometimes you just need something quick and sweet. These rice cakes are often my ‘go to’ when I want to have that sweet kick mid afternoon and a biscuit just wont cut it.

Berries like raspberries, blueberries, strawberries, and blackberries, are rich in antioxidants like anthocyanins and flavonoids. These have been scientifically shown to protect against oxidative stress and inflammation, both of which are linked to mood disorders like depression and anxiety. Its also been discovered that they protect our brain cells from damage whilst also being a great source of fibre which helps regulate blood sugar. Stable blood sugars help to prevent mood swings!

Berry Rice Cakes

Total time: 5 Minutes
Servings: 1

Ingredients

  • Rice Cakes (I like the caramel ones for that added sweetness). You choose how many rice cakes, your snack- your rules!
  • Greek Yogurt (1 table spoon per rice cake)
  • Raspberries, Strawberries, Blueberries ... go on be rebel & do a mixture!
  • A plate
  • A spoon

Instructions

1. Pop your rice cake(s) onto your plate
2. Add a table spoon of greek yogurt to the top and spread around
3. Top with your berries & Serve
