Avo & Eggs Bagel
Alright Alright, I know! Who do I think I am getting all bougie with avocado … get used to it! I LOVE Avocado & Eggs, Guilty!
Starting my day with something savoury, packed with protein and good fats is what works for me. Where as with oats I seem to suffer from an insulin spike (thanks peri-menopause!), when I start my day with something like this it keeps me satiated until lunchtime.
PLUS there’s the added bonus that Avocado actively boosts your mood and sense of wellbeing due to its high levels of folate, vitamin K, vitamin C, and various B vitamins. They are literally like tiny cheerleaders for your brain. “Ahh but they are really high in calories Gem” I hear you scream, yes they are full of Healthy fats, monounsaturated fats to be precise. These fats actually HELP us absorb vitamins.
AND Avocados contain tryptophan, without tryptophan your body cant make serotonin. Without serotonin we are all destined to spiral into that pit of depression. Oh yeah and there’s another benefit to eating avocados too .. the magnesium and potassium in avocados can help relax your muscles and calm your nervous system, thus aiding in a better nights sleep.
Add in eggs and you have a marriage made in heaven! Eggs are packed with healthy fats, protein and all-important B vitamins. These have all been found to play an essential role in brain function and protect against depression. Deficiencies in B vitamins has been linked to a reduction in Serotonin levels and an increase in tireness. Eggs are also another great source of Tryptophan and other amino acids which are perfect building blocks for your skin. Just like avocados, eggs contribute to a healthy, glowing complexion too!

- 1 Bagel (toasted)
- Avocado ( I use 1/2 an avocado per person)
- Eggs
- Chilli flakes
- Juice of 1 lime
- Salt and Pepper
- Room temperature Cherry Tomatoes (If you think you dont like raw tomatoes stop eating them from the fridge! Their flavour develops when they warm up a little)
- Apple Cider Vinegar
- Saucepan
- Small Bowl (breakfast bowl)
- Sharp Knife
- fork
- a flat knife (Like a butter knife or standard dinner knife)
