Chinese Orange Pork

I have always found that making food fun is a great way to get more veg into my kids. Yes even though I’m a massive foodie, my kids are still … well, KIDS! If we are ever eating something that I haven’t ‘hidden’ the veg in like this, its always much less of a battle when I serve it with prawn crackers as scoops!

Often wrongly labelled a ‘white meat’ Pork is actually a Red meat and has historically been considered an unhealthy choice. However if you purchase pork tenderloin it is not only a good source of certain nutrients, as well as high-quality protein it is also as lean as chicken breast.

Packed with Vitamins B6 and B12 that supports your brain function and blood cell development and Amino Acids necessary for muscle development and maintenance, pork can be a great alternative to chicken as a protein source.

The veg content in this dish is rich in Vitamin C. Magnesium and other minerals that support our bodies. Oranges pack a great Vitamin C punch which not only supports our immune system it also supports the production of collagen and iron absorption! Peppers are a high fiber vegetable which is great for our gut health, they are also a brilliant source of Vitamin c, potassium and anti-inflammatories. Broccoli is truly a superfood in itself, it is so nutrient dense that it is often referred to as a ‘powerhouse’ vegetable. Broccoli is high in essential nutrients, antioxidants, and fiber. It’s also a great source of vitamins A, C, and K, as well as the minerals calcium and potassium. These nutrients are critical for our body function, and they help to do everything from supporting our immune systems to increasing the radiance of the skin.

Chinese Orange Pork

Prep Time: 15 Minutes
Cooking Time: 30 Minutes
Total time: 45 Minutes
Servings: 5

Ingredients

  • Pork Loin (I used 1kg for 5 portions)
  • 1 Leek
  • Broccoli (1 Large head)
  • Red & Green Pepper
  • 1 Orange
  • 2 tbsp Sweet Chilli Sauce
  • 3 tbsp Soy Sauce
  • Chicken Stock Cube
  • 1 tbsp Chinese 5 Spice
  • 4 Garlic Cloves
  • 1 tsp Ground Ginger
  • 1 tbsp Olive oil or Coconut Oil (melted)
  • 200ml Orange Juice
  • Rice or Noodles and Prawn Crackers to Serve
  • Large Pan
  • Grater
  • Sharp kitchen scissors
  • Sharp Knife

Instructions

1. Add your oil to the pan & gently warm it
2. Finely slice your leek and add to the pan, add a splash of water as it begins to cook to prevent it from burning
3. Use your kitchen scissors to cut up the pork into strips, straight into the pan with the Leeks
4. Add your Garlic, Ginger, Five Spice and crumble your stock cube into the pan. Mix to combine. continue to add a splash of water to prevent from drying out or sticking
5. Slice up the peppers and once the pork has turned white, add them to the pan.
6. Break up the Broccoli, and slice up the stem. Discard the bottom inch of the stem but the reast can be used exactly the same as the florets. Add to the Pan
7. Grate over the zest of the orange and then slice the orange in half. Taking care to remove the pips use your hands to squeeze/mush all of the juice and flesh away from the peel and into the pan. This is messy but quite satisfying. Stir through
8. Add the Soy Sauce, Sweet Chilli Sauce and Orange Juice. Stir to combine.
9. Add the pan lid, and allow to steam for 5 minutes. Stir and replace the lid for another 5 minutes. repeat until the Broccoli is tender.
10. Serve over rice or noodles and use Prawn Crackers as scoops to get hands on.
