Coconut Cookie Bites
This recipe came together one day when I was craving a sweet treat but wanted to keep it more natural and reduce the refined sugars. The result was a Moorish ‘cookie’, they didnt sink as much as I expected them to but actually I think it worked even better like this. Each cookie bite actually contains 7.3g of protein too … we will just ignore the calories!
Coconut is actually rich in fiber, vitamins C, E, B1, B3, B5, and B6, and minerals including iron, selenium, sodium, calcium, magnesium, and phosphorus – that’s quite a list! But they also contain a lot of antioxidants, this unique combination means that coconuts support heart health, boost immune function, and even possess anti-cancer properties.
