Mediterranean Rice Cakes

When you need a quick snack but a bag of crisps just wont cut it, these rice cakes hit the spot. And before you come at me saying rice cakes are like cardboard … wait until you’ve tasted this combo, and then we can talk. However if you really are a rice cake hater, this works with other crackers too. You do you Boo!

This snack has quite a few pros!

  • Making yourself food that is aesthetically pleasing communicates with the ‘self worth’ part of your brain. When someone makes an effort to make you something beautiful, it feels good right? Well why cant that someone be YOU? From now on, whenever possible make that bit of effort that says “I love myself, I am nurturing myself so here’s something pretty to eat
  • It’s super quick to make and actually very satiating
  • Hummus is rich in fibre which not only helps to keep you full but is also really good for your gut. Since 95% of our serotonin (happy hormone) is made in our gut, its kind of essential we do what we can to make out gut happy
  • Aside from being highly nutritious, chickpeas have been linked with lowering cholesterol too.
  • Tomatoes are packed with nutrients like vitatmin C, A and K as well as Potassium, Folate, Fiber and Antioxidants. They are great for boosting your immune system and skin health.

Mediterranean Rice Cakes

Prep Time: 5 Minutes
Total time: 5 Minutes
Servings: 1

Ingredients

  • Rice cakes, Lentil cakes, Veggie cakes or your choice of Cracker ( Your snack, Your Rules!)
  • Hummus of choice
  • Cherry Tomatoes (approx 6) Top Tip - Tomatoes taste better at room temperature so either don't keep them in the fridge or take them out a while before you want to eat them
  • A pinch of fresh basil
  • Balsamic Vinegar
  • Salt and Pepper
Equipment
  • A small bowl
  • A sharp knife
  • A plate or board if you want to get fancy
  • Tea Spoon

Instructions

1. Cut your tomatoes into halves or quarters and place into the small bowl
2. Add 1.5 table spoons of balsamic vinegar
3. Roughly tear up your basil and add to the bowl
4. Season with salt and pepper, stir and set aside for 5 minutes
5. Place two rice cakes/crackers on your plate or board of choice
6. Grab your hummus and put a heaped tea spoon full on each cake/cracker, spreading out to the edges
7. Once your tomatoes have had 5 minutes in the marinade, carefully spoon the entire mixture over your hummus
8. Garnish with some extra Basil & remind yourself that you're worth making beautiful food for
