Sausage Hash

Sometimes you need a hug from the inside, this dish is exactly that. Comfort food that wont leave you feeling bloated and like you’ve just eaten a pile of junk food. Leeks are high in vitamin K with is essential for bone health, they are also a great source of vitamins A & C which we need for our immune systems and skin. The tomatoes and carrots in this recipe give you a healthy dose of compounds needed by your brain to function properly. Proper brain function contributes to a healthy mind.

Sausage Hash

Prep Time: 10 Minutes
Cooking Time: 50 Minutes
Total time: 1 Hour
Servings: 4

Ingredients

  • 1 Leek
  • 4 Decent sized potatoes (small jacket potatoes)
  • 6 Sausages
  • 2 Carrots
  • 3 Cloves Garlic
  • 1 Tin Chopped Tomatoes
  • 1 tsp Paprika
  • 2 tsp Mixed Herbs
  • Salt and Pepper
  • Stock Cube
  • 4 Slices of stale bread or toast, buttered both sides
  • Grated Cheese to serve
  • Olive Oil
  • You'll need a big oven dish. I personally use a cast iron one
  • Preheat your oven to 200°

Instructions

1. Drizzle some olive oil into the bottom of your dish
2. Dice up your Leek
3. Chop up your sausages into 8-10 chunks each (I use scissors)
4. Slice your garlic thinly
5. Put the Leeks, Sausage chunks and Garlic into your oven dish. Stir and then season with salt and pepper
6. Pop into the oven, stirring frequently until the leeks begin to soften.
7. *TOP TIP - Add a little splash of water if it starts to stick
8. Dice your carrots
9. Cut your potatoes into chunks ( I cut mine into 6 chunks each)
10. Once the leeks have softened add your carrots, potatoes, paprika and herbs
11. Add another drizzle of olive oil at this point
12. Crumble over the stock cube
13. Mix and return to the oven
14. After 10/15 mins increase the heat to 220° to get a little crisp on the potatoes
15. When the potatoes are crispy add the tin of tomatoes and return to the oven for 15 minutes
16. Butter both sides of your stale bread or toast
17. Chop into little squares - Like Croutons
18. Sprinkle your croutons on top and return to the oven to crisp up while you grate the cheese.
19. If you want to be extra jazzy you could sprinkle cheese on top of the crispy croutons and return to the oven once again to melt
20. Serve with leafy salad or just in a bowl on its own
